A survivor of late stage terminal cancer, Chef Kelly has made it her mission to introduce the world to a healthier lifestyle.

MEET FOUNDER & EXECUTIVE CHEF, KELLY BOYER
I started PALETA in 2005 in the heart of my own kitchen shortly after graduating with honors from the Le Cordon Bleu culinary arts program. After putting on a few unwanted pounds with all the classical French cuisine, I decided I wanted to apply those cooking techniques to create more healthful fare...just for myself. Friends started asking what I was doing, then asked me to cook for them, then referred me to their friends, relatives, physicians, personal trainers...and so on. My passion project became my life's calling. Before PALETA, I graduated with honors from Northwestern University's masters program in Business and Organizational Development. I then became a Human Resources executive at a few large companies, but focused almost exclusively on the entrepreneurial aspects of each of those businesses. For instance, I was at The Disney Stores, Inc. while they were opening stores all over the world. At Capitol Records, we launched a new licensing division at the label and we had to build that from scratch. I also headed up the HR function at start-up GeoCities, took the company through an IPO, and assisted in our ultimate purchase by Yahoo!. I've always loved building things.
Even before my corporate life, I experienced a life-changing event when I was diagnosed with a rare advanced form of terminal ovarian cancer at the age of 21 right after graduating from college. With the love and support of my family and friends, WE beat it and it changed the course of my life forever. I learned to focus more on my body and mind and overall health and really enjoyed the every day experience of total body fitness. I always liked being in HR because I felt that I was making a difference in people's lives. We all spend so much time at our jobs that it was very satisfying working to improve the overall conditions and experience of whatever work environment I was in. Eventually I just wanted a different outlet for this energy and it translated perfectly well to PALETA, because every day I spend most of my efforts doing the best I can for our PALETA clients. If they are not experiencing improved health and well-being from our many services, then we are not doing our job. My amazing team also echoes that the most rewarding thing about working for PALETA is that they make people's lives better. That is inspiring for me to hear.
"PALETA" itself means the ART OF THE PALATE, so for me it all begins with the food! To support this, we have a 3-pronged philosophy that we call our PALETA PURPOSE. The first is our mission to provide our clients the cleanest, most delicious, healthy foods and beverages. We strive to add convenience to their busy schedules, and by changing the way they live through the way they eat. Freshness and quality are key and we are rigorous about sourcing locally as much as possible. Our overarching mission is to change the way you eat - to change the way you feel - to change the way you live!
The second is our mission of sustainability. I built my kitchen to LEED standards and specifications and we are constantly looking for ways to source more eco-friendly packaging and products. We completely negate our carbon footprint by planting trees around the world and we recently pulled our clients into the mix by planting a tree on their behalf for every eligible purchase. I believe we can preserve the resources of our planet for future generations. In fact, it's our obligation to do so.
The third is our mission of community support and outreach. We put a lot of time, money and energy into supporting local charitable organizations because we believe in giving back to the community that is responsible for PALETA thriving.
I believe we really distinguish ourselves by constantly raising the bar on our standards of ingredients and product profiles for all offerings to our clients. I'm not really interested in doing JUST meal delivery because that is not what everybody needs or wants. We developed a Mind & Body CLEANSE to help purge bodies of the toxins we can't avoid in our environment...like the very air we breathe. I am especially proud of our beautiful line of organic cold-pressed juices... PALETA PRESSED. They can be purchased in detox packages or just choose your favorites to sip and enjoy. We even designed a Sip 'Til Supper plan for those not interested in an entire day of juicing; we give you juices, vegan snacks and a dinner and the day ends with a raw vegan chocolate truffle! We also just rolled out our Get Glowing! Beauty Detox in partnership with Sonya Dakar Skin Clinic because we truly believe that beauty and health starts from within. You can treat your outside layer all day long, but if your inner body and self is not healthy...the rest won't work. The GG!BD combines 2 days of organic juices that focus on skin healing and repair plus 2 weeks of Sonya's organic Nutrasphere Detox skin care products. I tried almost every juice detox on the market and was always surprised that I could hardly get through the morning because many of them tasted so medicinal. As a trained chef and licensed holistic nutrition professional, I knew my team of chefs and nutritionists could create a line of organic cold-pressed juices that were both nutritionally sound AND tasted amazing. And, we succeeded! We just launched a new line of Power Boost wellness shots to give you a quick infusion of nutrients, vitamins and minerals. Plus, we handcraft our own line of PALETA Power Up Energy Bars and Must Be Nuts flavored almonds for a healthy snack on the run. We've recently moved into the Grab 'n Go market, so our clients can get healthy meals and snacks at select stores and fitness studios around Los Angeles. California today! The world tomorrow!
WHAT IS THE BEST BUSINESS ADVICE YOU HAVE RECEIVED?[+]
As a result of my cancer diagnosis and subsequent surgeries and chemotherapy, I lost the ability to have children. While I am extremely fortunate that radical treatments and surgeries saved my life, the reality that I would not be able to give birth caused a lot of mourning, grieving and feelings of loss for me over the years. It was only until someone special said to me, "Trees were created for many reasons. Some are intended to bear fruit. Others are intended to provide shade. Go into this world and provide shade and care to those who need it." It forever changed me and is what drives me in my life and business. The deep satisfaction I feel when my clients' lives are improved through a healthier lifestyle via PALETA is the nurturing I thought I would miss out on. I am only grateful.
